Vintage Japanese Signed Chef's Hocho Sushi 6" Knife Laminated Steel

This is a fine professional grade Deba Hocho (包丁) sushi chef's knife from the mid to late 20th century. Made using renowned Japanese knife making techniques. After forging and shaping it was set into a Magnolia wood handle.

This Hocho with a heavy single-sided blade used in the Japanese kitchen to prepare fish for sashimi, sushi sliced raw fish and seafood. It weighs about 8oz.
